follow the link for the "standard pump" and it's installation instructions
for a PDF fill that shows a typical RV water system layout.

The pump bypass was a simple way to fill your fresh water storage tank while
still being hooked up to city water. Generally to operate the valve you were
in a position to see the tank as it filled. Alot faster and cleaner than
opening the cap and using a loose hose. You will occasionally see this
feature on some high line coaches. The vast majority of the industry does
not include this feature in their coaches.
This bypass is not to be confused with the more commonly discussed water
heater bypass which is used when winterizing one's coach. This bypass
greatly simplifies the use of RV antifreeze to protect coach plumbing
without leaving residue in the water heater tank.

The only safe and practical replacement for the low pressure gas line is a
rubber hose. Please do not use metal of any kind. Metal, particularly copper
can not stand up to the vibration and projectile damage a gas line in that
area is subject to.
Airstream still uses a rubber flex line with the fittings you describe on
it.
Most of the rest of the industry uses a small diameter line with smaller
fittings. You might try looking in the local yellow pages for a company that
sells brass fittings and hose. Outfits such as this can actually fabricate
what you need.
