Dean,
 I installed a single fan like yours to the screen at the bottom of the
'fridge compartment, connected to a switch that has a light in it. Said
switch is mounted in my master control panel, and I run it only during
the day when the sun is shining on my 75W solar panel. (that's the only
time it's really necessary anyway) As you say, it really does help.
