I know you know what you mean which is 12 volt output. The link had a great 
graphic example.

In series a connection of two 12 v batteries will give you 24 volts which 
you don't want and in parallel gives 12 volts no matter how many you 
parallel minus to minus and plus to plus. If you wanted to use two golf car 
6 volt batteries for your 12 volt system which would fit in the large box 
you'd have to put them in series with one minus and one plus terminal 
connected now forming one single 12 volt battery.

Watch out for battery box and battery leakage corrosion at the bottom as it 
will rapidly cause rust through of the center frame member. Hardly 
noticeable because it is inevitably concealed, you might want to get after 
the frame members all the way to the hitch with some rattle-can aluminum 
paint before you load the heavy batteries.

If you decide to use two batteries, they should be matched. When one fails, 
it often will take down the other but seldom do both simultaneously fail. 
That is one fair reason to use only one battery if you don't foresee a lot 
of dry camping. If you use two and eventually one fails, that's a good time 
to use the remaining good one in your favorite "other" vehicle (army jeep) 
as you shouldn't put a new battery with a considerable old battery if you 
can avoid it.
