Paul,

the flaw in your plan is the double ended plug, and perhaps the 
inverter power rating.
The double ended plug is a great safety hazard, if not now, then in a 
while when it gets into the wrong hands. You are also bypassing any 
breakers this way, even though the converter is surely fused internally.
The 12V fridges do have a second electric heating element, if I 
remember correctly.
I seem to remember the electric heater element in my 71's fridge being 
only 150W, but I could be wrong.
The setup will draw a fair amount of power from your tow vehicles 
charging system. 7-way flat RV connectors are only rated at 15-20A 
continuous current, and that's when they're in perfect and brand new 
condition. I recently changed to the 7-way round as found on the 
trailer side of the 70's trailers, because of my need to feed a safe 
30A continuous charge feed due to my electro-hydraulic brakes. I find 
those connectors electrically and mechanically  far superior tot he 
7-way flat connectors.
In short, if you do the necessary modifications to your electrical 
system both 120V and 12V, and if you step up the inverter rating a bit, 
it should work fine.
