Used one more than than I'd like to remember - night after night after
night, shaving away on the rivets on exterior skins of DC-8's.  You are
correct - that is the real "rivet shaver", the Olympic shaver is a
special application tool for their rivets.

The rivet shaver is really for taking down the heads of flush
(countersunk) rivets that might stand a little proud (above) the skin
surface.  I don't think I've ever seen one used to disintegrate a button
head rivet.  I think because of two reasons.  The blade is likely to
catch the rivet head and spin around it, and two, the shaving process
creates copious amounts of fine shavings when used to clean-up flush
heads - it must make big piles grinding down button heads.

It is very important to get the stop set just right on the shaver, other
wise you will have little shiny 1" circles in the skin (not that that
ever happened....)
