Chris,

Whatever light colored wood you decide on you need to keep one thing in
mind - *before* you stain, pickle or whatever be sure to seal the wood
FIRST.  This will stop the wood from absorbing too much stain in areas that
will look blotchy later.  If you've ever seen interior wood trim on a house
that was left natural and it's splotchy with light and darker areas that is
the reason - failure to apply a sealer - first.
