Although it was not always the case, the generally accepted safe way to
travel is with the propane turned off. Back in the 60's we were not so
safety minded and most people traveled with the propane on with at least the
propane refrigerator running---your instructions say to close the valve to
the stove before moving, no doubt a safety issue with the stove pilot and
reflecting the attitude at the time that it was OK to travel with the gas
on.

This said, there are still people who run with propane on. I admit that I am
one, but I now only leave it on when I know that I will be traveling 8+
hours a day in hot weather, otherwise it is off. When it is on I take
special precautions while refuelling.

BTW, my hot water heater's pilot never did remain lit during travel. And
there is a reason for traveling with the furnace on. Traveling in below
freezing temperatures with water in the pipes!
