I feel your pain.  This is a case where "a little do a little good, a 
lot will do a lot a good" doesn't apply. It only takes a real small 
fillet of sealant at the seam - no higher than the top skin, no wider 
than 3/32", 1/8" at the very most.  You're, right, nothing is more ugly 
than sealant smeared all over the tops of windows and seams.

You are again correct in that the excess sealant has to removed before 
polishing, as the polishing process will turn it black.

I've always felt that a a good sealant job is one you can't see or 
notice.
