Your plan sounds pretty good on the water lines.  My lines were wrapped 
with insulation -- I could see it, and I didn't think I could just pull them.  
Besides, at the time I started I had not yet heard of Pex.  I thought I'd be 
soldering copper. I suspect I would have had to pull the black water tank 
anyway.  The screws that were holding the valve on had rusted so much that 
they were interfering with the valve opening.  So it was not easy extracting 
the screws.  Not being under the trailer while I did that chore was probably a 
good thing.  

I think you are a step ahead of me in the sense department.
