[VAL] copper tubing vs. other metals.

Just a random question. 

can anyone explain why copper tubing would be used for
a water system as opposed to say, stainless, or any
other metal.

assume PEX is not an option.  Was it a cost thing? a
weight thing?

I'm just curious.
