If you can find 3/4" PT in something better than construction or 
sheathing grade - that would be the best, otherwise the 5 Ply is 
probably satisfactory if of good quality - just paint all the edges.  
The 7 Ply is rather expensive, and is probably a waste of cabinet grade 
plywood.
 
As for the toilet - if the original porcelain one is truly broken (as 
opposed to merely inoperative), the porcelain Sealand Traveler is a 
good choice over the plastic replacement toilets:

If you are patient and handy, the older toilets can be repaired using 
newer parts from plumbing supply houses and the hardware store.
