Hi Jim,

You are probably going to have to mix colors whether you use min-wax or
Watco. 

Probably a mixture of light oak and a walnut will give you the honey
color. Grab a scrap and keep trying. You can also use two coats of
different colors. 

If you are putting any kind of finish over the minwax, try that out too
to be sure you have the right amount of shineyness (sp). Watco or other
oil finishes are not designed to have finish over them. With elbow gease
and multiple coats of oil you can get a finish, but polyurethane is
easier, IMHO.
