Wendy,
 Excessive ice on the evaporator coils is usually due to a leaky door
seal, in my experience. If the seal is in good shape, ice can come from
opening the door too much or leaving it open too long. RV fridges (at
least the older ones) aren't self-defrosting, so you need to shut it off
and let the ice melt out periodically.
