Gerald, You are correct,oven is manual. Pilot is safety pilot.When you light
oven burner, pilot is also lit. There is an oven burner minimum flame
adjustment ,ideally when oven temperature is reached[set by knob] flame on
burner will reduce in height[heat output],if oven burner flame adjustment is
too low it will go out but pilot will continue to burn.When thermostat calls
for heat gas will flow to burner whether lit or not, pilot flame is set to
be taller than burner flame .If pilot not burning, raw gas will  enter hot
stove.When you turn oven off ,gas supply to both oven burner and  pilot is
shut off.And yes those things will singe your eyebrows if you'r slow in
getting a match to the oven to light burner.That setup goes back aways.The
reason  folks smell gas around some stoves is that even with the dual pilot
light arrangement when you turn on gas to top burners gas also flows to
constant pilot. If its not lit or turned off gas will accumulate in
trailer,not enough to cause an explosion probably but enough to smell
