[VAC] Plumbing A Complete Disaster

Somewhere along the line, the previous owners of my 1968 Caravel decided to play fast and loose with the plumbing, replacing large sections with rubber tubing and removing the check and pressure relief valves, the water inlet and the pressure regulator. So I can only test water from the tank using the on-demand pump.

Today as I ran the pump for the first time, water poured from the rear of the trailer. No water pressure was available in the shower, toilet or tap.

Please tell me the best way to access the pipes and fixtures at the rear of the trailer. Do I need to pull out the shower and toilet, or can I can access to fix the leak from the belly of the trailer. Thanks for any advice, and don't hesitate to add your thoughts on how to fix the leak(s).
