Rusty,

I have found that my 1960 Overlander (with the water tank in front, beneath
the sofa, needs the extra weight of a full water tank to be stable. Not that
I cannot tow it with empty tanks, it just handles better with the extra
weight.

If your maiden voyage is going to be a 2000 mile trip, I would highly
suggest one or two local weekend trips for you to get used to the trailer
and how things work.
