 It's OK to run the fridge while in motion, you just don't want it to
operate in a STATIC off-level condition for any length of time. The
movement cancels out or negates any off-level condition.

Newer fridges are not harmed as easily by running off-level, so if you
have a late-model, you needn't be as concerned. No, I don't know how to
tell, but you can probably find out on http://www.rvmobile.com.

There's a seperate question as to whether it's wise to have your propane
tanks 'on' when moving. Some people feel comfortable with them open so
the fridge can operate, others don't and shut down everything when
moving. The latter figure that their time en-route on any given day will
be short enough that the fridge won't thaw out.
