[SilverStreak] Speaking of wood paneling ...

My 1983 (I'm not sure of specific model, and don't know how to tell;
it's a 33' model) is showing a fair amount of wear/damage to the
veneer; the PO says it's likely due to storage in CA heat. I'd like to
replace it with something lighter in color, but it looks like I'd need
to take out a lot of the cabinetry and appliances to do such a job.

Is that an accurate assessment? Has anyone here done this job? Any
advice or recommendations are welcome.
