  As noted, you do want to keep the tongue weight around 12 to 15% of the total trailer weight.  You go to light and the trailer is prone to sway more.  IF you are trying to keep the weight off the tow vehicle because of sagging problems, you need to get weight distribution bars on the rig.
   
  We have two 30# bottles and would not want smaller.

smallest tanks I have seen for trailers is 5 gallons. If it were me I
would try to get a minimum of two 7.5 gallon tanks, two 10 gallon
tanks would be ideal. YOU WANT WEIGHT ON THE TONGUE! The trailer
will exhibit less sway if you have 12-15% of the total "loaded" weight
on the tongue. Propane is only about 7 pounds per gallon, so an
additional 5 gallons of propane will only weigh 35 lbs. + another 8
lbs for the bigger tanks.

Many years ago I had a 16' "Cardinal" trailer with two 5 gallon tanks
on it and I would go through both tanks on a 5-7 day camping trip,
with about the same equipment you list.

I'd like to keep my tongue weight as low as possible and therefore am

of purchasing 2 - 10lb tanks. I've never camped with a trailer before

don't know if I will go through these tanks in a day or will last me

while. I can get the bigger tanks no problem, but again just trying to

the weight down.
