Your owner's manual tells the answers to your questions.

1a) The switch turns the water heater on. There must be both LP gas and
12V power to the heater for it to work. The red light tells whether the
burner has lit or not. It flashes when the electric lighter comes on. If
the burner fails to light the red light will stay on. If the burner goes
out (wind blew flame out; LP gas ran out) the red light will come on and
stay on until the switch is turned off. My trailer has an additional
switch and pilot light over the closet in the bathroom. Very convenient
when in the bathroom and I want to turn the WH on.

1b) The other switch is for the ceiling light in the kitchen area just
ahead of the A/C. Both it and the switch on the light fixture have to be
"on" for the light to come on.

2) Sounds like a bad fuse or loose connection, since the vibration from
towing the trailer is associated with the light failure.
Fuses sometimes don't make good contact. They are inside the converter
(12V power pack/battery charger) rear panel. The converter is in the
outside compartment on the offside (street side) just above the
water/sewer connections. The converter panel is held shut with the wing
nut at the top. The fuse can be removed and its ends polished with rough
paper, like brown grocery bag paper, and the fuse holder clips polished
with a rubber pencil eraser. If the clips seem to grip the fuse loosely,
gently squeeze them in. Then snap the fuse back into place.
The fuse may be bad. They sometimes die of old age, vibration, internal
corrosion (dissimilar metals), even if never overloaded.
A connector may be loose. Make sure the wire connector on the converter
fuse holder is snug. If it is tight, check the connections at the
fixtures.

4) No new manuals are available unless someone has some in his
collection. I have a '78 edition with my '79 trailer.
