I'm going to be doing this exact thing in my Sovereign as soon as the 
parts come in. See the thread "freebies...sorta Sovereign" on 
airstreamforums.com

The tubing is PEX. If you want a slick installation, you have to use the 
crimped fittings, not the ungainly fittings that you get at Home Depot. 
I'll have full photos to show you the way.
