You are more than capable. I've done bunches of Airstreams, Silver Streaks,
Streamlines, Alumna Holiday Ramblers and more. You'll have no problems and
probably wind up improving the old system. Just remember the deadly
importance of grounding the ac fed chassis, double redundant.
Remember, just get a conveniently small 12v burgular alarm or deer feeder
battery from your hardware store, $9 to $14, and when in doubt about a wire
in the 12v system, just connect the battery as if it was the converter to
any lead to justify or prove out the circuit you might question. Like a
continuity checker probe, in reverse. You can also just use your 12v
car/boat battery charger to do the same thing.
You don't have to copy old technology. You can upgrade to a multitude of
self resetting circuit breaker fuses in so many styles and types available
at Stasco, which is really inexpensive, or other places, more expensive.
