Have you seen the "Manifold system" for PEX?  It is a block with one 
input and many outputs on it for both hot and cold water.   You Home 
Run all your plumbing.  That way you have No splicing or "T's" to work 
with.  The smaller size tubing is all that is needed as we don't have 
long runs or use a lot of water.
And someone can turn on the water in the kitchen sink and you can still 
take a shower..
Fishing it in should be easy if you tie and tape a light rope onto the 
old pipes as you take them out.
