I have changed ours over to a dinette and haven't regretted it.

The project really was pretty simple, given you have the appropriate 
tools.  We tried to keep it in the style that it would have been built 
if it had been a dinette from the beginning, although this option was 
not available in 1964 GT.  You can see pictures of our results on our 
website in the 'During' section.
