There's also a good reason to use 3/8" instead of 1/2" tubing: you get 
hot water at a faucet much quicker, wasting less precious water if 
you're boondocking.

As far as "I don't want my shower to scald me when someone draws cold 
water in the kitchen" goes, it won't make a lot of difference. My house 
has all 3/4" cold water lines, so you'd think there'd be plenty of extra 
capacity. But, if you flush a toilet or draw cold water in the kitchen, 
the shower gets MUCH hotter. Even though both the toilet and faucet are 
fed with 3/8" tubing, so have a restricted flow.

 From what I've seen, 3/8" tubing flows plenty of water.
