Ted,

Tubing size will affect volume of water, not pressure per se.  A 3/8 tube
will carry just over half the volume (actually 9/16) of a 1/2 inch.  I
wouldn't want to be in the shower while somebody runs a glass of water if
3/8 tube is feeding both.  Of course there is no reason not to use smaller
tubing for the final drop to an individual tap, most manufacturers
(including Airstream, at least on mine) already do that.
