I would strongly recommend changing the plug on the trailer side to a new
style 7-pin plug, wired according to the current standard.   I doubt there
are very many tow vehicles around with old style plugs and the old Airstream
pin outs, so no need to preserve the old configuration.  You'll get better
connections with a single new rewired plug than with a pigtail with a plug
on each end.  I would also worry about losing the adapter or having it
disconnect while en route.

There is no value added to a trailer by having the "original" connector
intact, but there is value to having a clean new plug with solid
connections.
