Dan, we too are nearing the "Mother-of All-Yardsales" to pare down years of accumulated STUFF and my thoughts on cookware stop at the Eat ware. But I would say you'd need a good cast-iron frying pan. Preferably a rather deep one so it would be multipurpose with a matching lid. From there it's a matter of priorities depending on what you normally cook. A couple pieces of bake ware are handy as are a cookie sheet or two. Make sure they all fit in your oven and cabinets..

Some folks do with out the oven saying they're too inefficient or don't bake right. In that case you'll need a convection Microwave. In that case all metal ware is out for baking and you'll need other
stuff.
