Harry: Us cajun types have "cajun teflon". This is the famous black iron skillet and dutch oven. Properly seasoned, these two items will outlast any other kind of pot or pan, and can be used for just about any kind of dish you might like to cook, either on stove or over an open fire. I have one TFal teflon pan specifically for doing egg omlets, but all else is cooked in the iron pots !
