If you remove the knob the should be an accesible adjustment screw that is used to adjust the thermostat. There apparently is some kind of diaphram in these things that can stick. I have had some success running the screw in and out a couple times to pop it loose. If that works you will then have to get an oven thermometer and play around until you get the setting right.
This saved the stove in my 54. A few sharp raps with an apropriate object may be worth a shot before trying the adjusting screw or disassembly.
